Sneak peak inside new microbrewery

A small, independent pub group which is passionate about promoting artisan craft beer over the more major, mainstream brands has opened a brewery in Wilmslow town centre.

Brewhouse and Kitchen, who purchased the Bollin Fee from JD Wetherspoon, are holding team training sessions over the next couple of days ahead of their official opening on Monday, 11th July.

Having opened their first brewhouse in Portsmouth in 2013, the company has expanded rapidly and now operates twelve pubs across the country - and will shortly be opening one in Chester as well.

They are a bit different from your traditional British pub though as they carry a range of 22 draught beers and brew at least six seasonal beers on site in their own micro-brewery. Each range is unique to the pub and each Brewhouse and Kitchen has its own Head Brewer, who customers are able to watch at work.

Head Brewer Mark Brewer will start brewing in Wilmslow next week where they have the capacity to produce seven of their own craft beers and another three on keg.

In total the company brews 98 unique beers, ranging from Pale Ales to traditional Milds and Porters to experimental beers like Cuffia, Lime and Coriander.

Eighteen members of staff who previously worked for JD Wetherspoon, including the management team, have transferred to Brewhouse and Kitchen and an additional twenty employees have been taken on.

General Manager Kate Shaw, who worked at the Bollin Fee for five years, said "I'm excited about what the future holds. I think it's going to be a great addition to Wilmslow and we've had really positive feedback so far."

Steve Gething, who will be taking over from Kate temporarily whilst she goes on maternity leave, said "The team as a whole have been welcomed fantastically. It has been lovely to have so much interest and people wanting a new company to thrive in the area.

"We are looking forward to welcoming lots of new challenges and want to get settled and become a part of Wilmslow life."

For those inspired to find out more about brewing, Brewhouse and Kitchen will also offer Brewery Experience Days, where you get to work with the pub's head brewer for a day and learn how to brew beer. Guests can also book an evening beer masterclass, or a food and beer matching experience.
